Mini Nectarine Pies


– 2/3 cups granulated sugar

– 4 tablespoons all-purpose flour

– 1/2 teaspoon ground cinnamon

– 1 cup heavy whipping cream, or alternative 1/4 cup unsalted butter, melted + 3/4 cup milk,mix, then pour mixture in the amount recipe calls for

– 2/4 teaspoon vanilla extract, or 1/4 teaspoon almond extract

– 5 nectarines

– muffin/cupcake tin (12 spaces)

– nonstick spray


– 2 cups all-purpose flour

– 1/4 teaspoon salt (optional)

– 1/2 cup vegetable oil

– 4 fluid oz. cold milk


1) Pre-heat oven to 400 degrees farenheit. 2) Mix the sugar, flour, cinnamon, and extract in a medium sized mixing bowl. Carefully stream in whipping cream. Mix well.Set aside. 3) Get a pot, and start boiling some water. Once boiling, carefully drop in the nectarines. Boil nectarines for at least 30-45 seconds. After boiling, drain, and immediatly run cold water on the nectarines, just for a couple seconds. Peel,cut,and then set aside. 4) Now its time to make your dough. Quickly spray a muffin tin with your non-stick spray. Set the tin aside. 5) Here’s the “fun” part; Making the dough. In a mixing bowl, mix the flour, salt, vegetable oil, and milk. Beat hard. It may take a lot of work, but if you mix it well, the dough will work perfectly! Roll out dough using a roller. Not to thin or thick, otherwise the dough will not taste like it should. Leave some extra dough for the line/dough crossing over the top.  Line the muffin tins with dough. Cut the extra dough on the top off,extra on the top, and form a pile. That way you can reuse the extra dough. 6) Pour your mixture in each spot of dough, then layer the nectarines on top. Use extra dough, in the shape of rectangles, to cross over the filling on top, in the shape of a plus sign (optional). The only reason why I said to use 5 nectarines, is because we have a nectarine tree in our backyard; therefore they are much smaller, and 5 was the amount I needed. The store-bought ones are larger, so you may have to use 3 or 4. If you really enjoy a fruity taste, you can use 5 nectarines. 7) Insert tin into preheated oven. Bake for 24-25 minutes. Take out, and allow to cool. Serve hot or cold. Enjoy!
